Hearty Breakfast: Berry Oatmeal Pancakes

I am back at my parents’ for the month and it’s going to be a busy month. I wanted to cook something special for them this morning. Since my parents have been trying to eat healthy, I carefully chose a well-balanced meal which would also surprise their taste buds. My mom is very picky when it comes to food and even she loved it.

Berry Oatmeal Pancakes

2 cups of rolled oats
2 cups of buttermilk
½ cup of flour
2 eggs
2 tbsp brown sugar
1 tsp baking powder
1 tsp baking soda
½ tsp table salt
½ cup unsalted butter
½ tsp vanilla essence
~ 2 cups of blueberries
Vegetable oil to fry

Serve with
Maple syrup

A night before, mix the oats and buttermilk in a bowl, then refrigerate. Also, leave out the butter to soften.

The next morning take the oats mixture and eggs out of the refrigerator and let them sit on the counter. The goal is to bring the refrigerated ingredients to room temperature. Add rest of the ingredients to the oats mixture and mix until everything combines. If you are short on time then add the blueberries to the batter. This will turn the batter into a purplish color. But, if you have some extra time it’s best to press the blueberries into the individual pancakes as they cook; it tastes better and looks prettier.

Put a large frying pan on medium heat and brush with vegetable oil. Once pan is hot, use a ladle to spoon the batter into the pan. Once the batter starts to set then press blueberries into them. If you can cover the pan with a lid; this will decrease the cooking time. Cook for 1 to 2 minutes till the top looks set around the edges, then use a spatula to flip them over. Take off the pan once both side are cooked. Serve hot.
